Chef Mathieu Rostaing-Tayard, owner of Micro-Sillon in Lyon and formerly of Sillon in Biarritz, will kick off the new In Good Company season on September 23.
After starting his career alongside Pierre Gagnaire, Nicolas Le Bec and Éric Briffard, and gaining experience in other prestigious establishments, he opened his first restaurant, Le 126, in Lyon in 2008. In 2012, inspired by a world tour that took him from India to Canada, he returned to Lyon to launch the highly creative Café Sillon in 2014. In 2021, seeking a stronger connection with nature and produce, he moved to Biarritz to open Sillon, a true culinary laboratory where he blends respect for the Basque terroir with global influences.
Food & cocktail pairing dinner – exclusively on the 3rd floor – €140 per person
Arrival possible between 7:30 PM and 8:30 PM.
A €50 deposit per person is required for this dinner, with the balance to be paid on site.
